|Strawberries and Grilled Vegetables Salad|
Look what I had earlier for my lunch! With the current sunny weather we have been blessed with, a super fresh light salad is just what I need. I decided to add the strawberries in not just for colour - but so I can have my fruits and vegetables in one dish. Easy!
This recipe is simply delightful and perfect as a side dish or a light meal. It is simple to make, flavourful and a joy to look at, what more could you ask for :)
You just need to grill some mushrooms and aubergine with garlic, olive oil and balsamic vinegar, then toss together with chopped romaine lettuce and strawberries. Job done. I felt that the grilled vegetables added enough flavour to the salad hence there is no need for more dressing. Just a squeeze of lemon juice to make everything fresh and zingy.
Recipe for Strawberries and Grilled Vegetables Salad
Serves 1 / Prep Time 5 minutes/ Cooking Time 10 minutes
1 Large Flat Cap Mushroom
1/3 Aubergine (sliced)
Romaine Lettuce (4-5 leaves, chopped)
5 Strawberries (sliced)
2 cloves Garlic (diced)
1.5 Tbsp Olive Oil
1 tsp Balsamic Vinegar
Pinch of Salt and Pepper
1. Slice aubergines and mushrooms into slices. Mix diced Garlic with Olive Oil, Balsamic Vinegar, Salt and Pepper and pour over the aubergines and mushrooms.
2. Chop up romaine leaves and slice strawberries, place in a salad bowl.
3. Heat up a grill pan, once hot, place the aubergines and mushrooms in and grill til nicely browned and cooked. Do not overcrowd the grill pan. Once cooked, remove from pan and place on top of salad.
4. Squeeze the lemon juice over the salad and toss evenly.
